Pumpkin Bars

‘Tis the season…

Actually, I had a can of pumpkin that I needed to use. After our talk a few weeks ago about why I didn’t cook anymore I’ve been trying to do more of it. And I’ve been trying to focus on foods that I like, and have fun cooking. Pumpkin Pie has always been a favorite, and with that can taking up space in the cupboard it seemed like the perfect thing to start with.

I do not like pie crusts. Cooking them, or eating them. I’m sorry, Nick. Besides, the pumpkin filling is basically a custard. It doesn’t really need a crust, especially if you add some flour and baking soda to it.

I mixed it according to the directions on the can, then added about 1 cup of flour and 2 tsp baking soda. I poured it into a 9x13 pan and topped it with crushed walnuts and some stale marshmallows I found in the back of the pantry.

It took about an hour to bake. The kids all liked the first bite, after that they just ate the marshmallows off. It was pretty good for my return to cooking.
