Blueberry Cobbler
When Life Gives You Blueberries
I had all of those blueberries leftover from the Dragon Juice and I couldn’t bring myself to throw them away. So I decided to make a simple blueberry cobbler.
Blueberry cobbler is easy, and we used to serve it in the last restaurant I worked at. I didn’t make the cobbler filling very often, I did the biscuit topping more. I’ll have to dig out that recipe soon. But the filling is so simple. You mix mix sugar and cornstarch at a 5:1 ratio (depending on how sweet you like it) and you add the sugar to the blueberries (2:1 in favor of berries) and boil it, then simmer until thick. I did not have lemon juice, and it does need it, I think about 1 tbsp of lemon juice to 1 cup of berries.
The biscuit topping is also easy, if you understand the science of baking. Maximus likes to make up recipes for cakes, but he doesn’t yet understand that almost all baked goods use the same ingredients in different proportions. The difference between basic bread, basic biscuits, basic cookies, and basic cake is the amount of eggs, butter, and sugar.
Simple Sweet Biscuits
2 tbsp butter
3/4 cup flour
1 tbsp sugar
1/2 tsp baking soda
1/4 cup milk
Mix into a stiff dough. Shape into rounds and bake for 8-10 minutes, or till golden, at 375 degrees.
Yield, 2 biscuits
For biscuits you generally want to mix the cold butter with the flour until it’s crumbly, and then slowly mix in the rest of the ingredients one by one. For cakes and cookies you want to cream the butter and eggs with the sugar and then alternate adding the dry ingredients and the milk. Because I cook quick & easy I add everything at once, and it turns out okay (fudge is different)
I wish I’d had the lemon juice to enhance the blueberries. But I’m really happy with how the biscuit turned out.
